The exact blend changes every year, depending on what nature throws at Pilar.\u003c\/p\u003e\n\u003cp\u003eEverything is 100% natural here in the growing of the grapes, and the making of the wine.\u003c\/p\u003e\n\u003cp\u003eThe winemaking is a little bit mad - but it works. Pilar ages the grapes separately in stainless steel tanks for 3 years. She then blends the wine together, and it sits in steel for another 3 years to properly come together. It’s then bottled and aged for another year before release.\u003c\/p\u003e\n\u003cp\u003eYou end up with a rich, complex and highly aromatic white wine. The texture is just so soft and effortless, it’s a joy to drink and indeed, savour. There’s peach and apricot fruit, there’s plenty of florals, and great balance and freshness.\u003c\/p\u003e\n\u003cp\u003eYou wouldn't be far off if it reminded you of a great Viognier like Condrieu, home of Pilar's great-grandparents.\u003c\/p\u003e\n\u003cp\u003eYou’d also never think it was eight years old, and in fact it’s got plenty left in the tank too, if you wanted to lay down a few bottles.\u003c\/p\u003e\n\u003cp\u003eA Pita Cega is found in Spain’s best restaurants - which is pretty cool. As the sea came in, it deposited sandstone, and as it receded, it mixed in decomposed granite and shale.\u003c\/p\u003e\n\u003cp\u003eThe comparison to Cornas is, in Danie’s words, ‘uncanny’. You have granite at the top of the hills, and as you move down south it gets sandier.\u003c\/p\u003e\n\u003cp\u003eThe vineyard behind this wine was planted in 1996 on sandy soils - and the whole area is cooled by south-easterly winds blowing from False Bay. Which means the upside here is huge!\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eIt’s wonderfully ironic because it was on these very slopes, around the Castello di Grinzane, that the modern dry style of Barolo was first pioneered back in the 1800s.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eCamilla grew up in a winemaking family and is now using the fruit from their best vineyards to make wines under her own name. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eGrinzane is the only Barolo village close to a river, so you get a greater mix of soils than elsewhere. This means you get more lift, perfume and aromatics here than just structure and power.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eCamilla tells me the defining characteristic of the Castello vineyard is the spiciness of the fruit. You get a big difference between day and night temperatures, which concentrates the flavours in the grapes\u003cbr\u003e\n\u003c\/li\u003e\n\u003cli\u003eThe soils are very poor and made up of white marl - so the vines struggle and produce less fruit per plant. Again doubling down on that concentration\u003cbr\u003e\n\u003c\/li\u003e\n\u003cli\u003eThe grapes are slowly dried on racks for 45-50 days after harvest, increasing the power and intensity even further\u003cbr\u003e\n\u003c\/li\u003e\n\u003cli\u003eThe wine is then aged for 3 years in French and American oak, to make it even more smooth and luxurious.\u003c\/li\u003e\n\u003c\/ul\u003e\n\u003cp\u003eWines around here are usually made from a blend of three grapes: Corvina, Rondinella and Corvinone. \u003c\/p\u003e\n\u003cp\u003eCorvinone adds colour and richness to the party, and Mirko believes it’s the most important component of the blend. So he decided to make a single-vineyard, single-grape wine dedicated to the variety.\u003c\/p\u003e\n\u003cp\u003eIt’s powerful, raisiny and dark, with lovely herbaceous and balsamic flavours, and coffee and chocolate too.
